Ingredients: 6 1/2-7 cups all purpose flour 2 T. instant yeast 2/3 c. sugar 1 1/2 tsp salt 1 c. milk 1 c. water 1 stick butter 2 eggs filling: 1/2 cup sugar 1/2 cup brown sugar 1 T. cinnamon 6 T. butter softened

Directions:In a large bowl combine 3 cups flour, yeast, 2/3 cup sugar and salt. Heat the milk and butter in a medium bowl in the microwave until butter is mostly melted. Add the water which should cool the mixture to about 120 º F. Add the liquid to the flour mixture and add the eggs. Blend at low speed until moistened then beat 3 minutes at medium speed adding flour gradually to make a soft dough. When you have the 6 1/2 cups of flour in let the dough rest for 10 minutes to fully soak up the liquid. Then if the dough is still very sticky add up to a 1/2 cup more. Knead for 5 to 8 minutes. Place in a greased bowl turning the dough to grease the top. Cover; let rise in warm place until double, about 1 hour. Meanwhile prepare the filling. Combine the sugar and brown sugar and cinnamon in a small bowl. Set aside. Take butter out of the refrigerator to soften. Punch down the dough. Divide into 2 parts. On a lightly floured surface ( I use parchment paper) roll each half to 15x12 inch rectangle. Spread with 3 tablespoons of softened butter and sprinkle with half of the filling. Roll up the dough and pinch to seal the edges. Cut into 12 slices, place cut side down in 2 greased 9x13 pans. Cover lightly to rise till almost double about 35 minutes While the rolls are raising, heat oven to 375º F Bake for 20 -25 minutes until golden. Allow to cool slightly and frost with cream cheese frosting or your favorite frosting. |

Notes: Cream cheese frosting: 1/2 stick butter, 4 ounces of cream cheese beat together until smooth. Add 2 tsp of vanilla and 2 cups of confectioner's sugar and beat until smooth. you can add more sugar if you want it thicker or add a tsp of plain yogurt or milk to thin.
