Cookie base:
1/2 c. creamy peanut butter
1/3 c. almond flour
1/4 tsp. baking soda
1 tsp. cornstarch
3 tsp. honey
1/2 t. vanilla extract
1 egg white
PB filling:
1/2 c. creamy peanut butter
2 T. honey
Chocolate coating:
3 oz. dark or semisweet chocolate
Peanut butter Drizzle:
1/4 c. creamy peanut butter
1 t. honey

Directions:
Preheat oven to 350º F. Mix all ingedients for cookie base in a medium size mixing bowl. Using a cookie scoop, place cookie balls on parchment prepared cookie sheet. Flatten cookie balls with hand to about 2" in diameter and 1/4 inch thick. Makes 1 dozen cookies.
Bake 8-10 minutes. In a small bowl combine filling ingredients- peanutbutter and honey. Add 1/2 tsp. on each cookie. Place cookies on cookie sheet in the freezer for 20 mins. Meanwhile melt chocolate in double boiler. Scoop 1/2 T. chocolate onto each cookie, return cookies to freezer on parchment paper. in double boiler melt the peanut butter for about 2 minutes until it thins out. Drizzle over hardened chocolate on cookies. Allow peanut butter to harden for about 10 minutes before moving to airtight container for storage.
