Marinade:
4 guajillo chile -- I used 4 t aleppo chili dried
1 ancho chile I used 1 tsp aleppo chili dried
4 cloves garlic- I used dried garlic powder
1/2 onion chopped- I used dried onion powder
1/2 c Orange Juice - I didn't have any so used pineapple juice
3/4 c Pineapple juice poured juice off of pineapple rings.
1 T oregano
1T thyme
1 T cumin
1 t allspice
1 - 2 T kosher salt

sliced pork loin or boneless ribs- I had three smallish packages of pork and it was enough marinade. You can always make more

Directions:
Directions:
Mix marinade ingred. Soak pork for 4 hr to overnight.
Grill pork. Slice thin.
Grill or broil pineapple slices.
Make up some finely shredded cole slaw.
Corn or flour tortillas (small ones)

I used green salsa, sour cream, pickled jalapenos, green onions grated Mexican cheese as toppings
