To bake a cake that raises evenly and is done perfectly, wrap an old, thin towel around the cake pan. Bake the cake until it is firm and slightly brown. Carefully remove the wet towel and leave the cake in the oven for 3 - 5 additional minutes for the crust to develop. Trust your nose. A cake is close to done when you smell it.
