3 cups sugar
1 stick margarine
1 cup evaporated milk
1 cup peanut butter (creamy or crunchy)
1 t. vanilla

Grease an 8 X 8 baking dish. In a saucepan, bring to a boil sugar, margarine and evaporated milk to "soft ball stage". Add peanut butter and vanilla and stir until smooth. Pour into the baking dish and allow to cool. Cut into 1 inch squares.

** Soft-ball stage refers to a specific temperature range when cooking sugar syrups, occurring between 235 and 245 F. In addition to using a candy thermometer, this stage can be determined by dropping a spoonful of hot syrup into a bowl of very cold water.
