2 sticks butter, softened
1 C brown sugar, packed
1/3 C sugar
1 egg
2 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt
1 3/4 C flour
1 C rolled oats
1 C sweetened grated coconut
1 1/4 C chopped pecans
1 1/2 C Andes peppermint crunch baking chips

Directions:
Directions:
Preheat oven to 300º.
Cream butter and sugars until fluffy (about 3 minutes).
Beat in egg and vanilla.
Add flour, baking soda and salt.
Mix completely.
Stir in oats, coconut, pecans and baking chips.
Place 1 inch round balls on lightly greased cookie sheet two inches apart.
Press lightly to flatten.
Sprinkle some of the remaining chips on top of each cookie.
Bake for 12-15 minutes.
Remove from cookie sheet and let cool on wire racks.
