6 medium red potatoes
1/2 package Oscar Meyer bacon
2 Tablespoons of cilantro, finely chopped
1/4 cup green chopped green onions (the green stems only)
1 1/2 cup Best Foods mayonnaise
Lawry's garlic salt

Directions:
Directions:
Start by boiling the potatoes for 40 minutes or until soft. While potatoes are boiling, chop the cilantro and green onions. Try not to use the stems from the cilantro. Place chopped greens in a bowl for the potato salad. You will want the hot potatoes to slightly cook the onion and cilantro. Once the potatoes are cooked, you will want to mash the potatoes in a bowl, one at a time with a fork. The texture should look like mashed potatoes. As you are mashing, make sure you are mixing the onion and cilantro with the potato. After potatoes and greens are mixed, add the mayonnaise. Mix well with spoon or fork.

Next, cook the chopped bacon in a frying pan until golden brown. Remove the cooked bacon from the pan and drain on a paper towel to remove the excess oil. Add the bacon pieces to the salad and mix well. Add garlic salt to taste.

This is the BEST salad. Ericka's family asks her to bring it to all the family gatherings, and it has become a favorite at the Admissions & Records potlucks. If you want to make an impression, this is the salad to bring!
