1 to 2 pounds boneless chicken breasts (12-15 breasts from Costco frozen chicken bag)
1 Jar (32 oz) Sliced Pickled Jalapenos (Hot)
3 Cup Flour
3 Tablespoon Crushed Red Pepper Flakes
3 Tablespoon Crushed Black Pepper
3 Tablespoon Granulated Garlic
1 Teaspoon Salt
Vegetable Oil
5 Eggs

For whole chicken breasts (4 - 6 breasts)
1 Jar (32 oz) Sliced Pickled Jalapenos (Hot)
1 Cup Flour
1 Tablespoon Crushed Red Pepper Flakes
1 Tablespoon Crushed Black Pepper
1 Tablespoon Granulated Garlic
1/2 Teaspoon Salt
Vegetable Oil
2 Eggs

For appetizers, cut chicken breasts into bite size pieces. For main dish, just use entire breast. (I buy the fillet chicken breasts at Costco because they are smaller than a regular breast).

Place chicken breasts or bite sized pieces in a glass container (or tupperware marinade container). Pour in the jar of pickled, sliced jalapenos. Make sure chicken is covered with juice and jalapenos. Refrigerate 4-6 hours, or overnight, but keep in mind that the longer they marinate, the hotter it will be. Overnight is probably the longest they should be marinated!

Mix flour, crushed red pepper flakes, black pepper, granulated garlic, and salt together in ziplock storage bag, large bowl, or broiler pan. In separate bowl, whisk eggs.

Heat 1/2 inch (or thereabouts) of oil in frying pan at medium-high heat. When oil is heated, dip the chicken breasts in the egg and then dredge in flour mixure, and put in pan.

Fry 8 - 10 minutes or until they are golden brown. Slice jalapenos can also be fried as a tasty snack.

We used a broiler pan the last time we made these as appetizers. It allowed us to dip and lay the pieces in the flour mixture and turn much easier than in a bag or bowl.

These were the hit of Kait & Claire's birthday party! Everyone wanted the recipe.

Just made this again, and had to use 4 cups of flour.
