Ingredients: 4 - 28 oz cans of diced tomatoes (drained) 8 medium onions 5 apples (Granny Smith are the best) 4 jalapeno peppers 4 green serrano peppers 4 "red hot" peppers (the little red guys) 4 bell peppers (red, orange, green, any colour) 2 1/2 cups vinegar 1 1/2 cups sugar 1 16 oz can tomato paste 6 garlic cloves, crushed 1 tbsp cayenne pepper 5 tbsp pickling salt 1/2 tbsp paprika 1/2 tbsp dry mustard

Directions:Chop all the ingredients into preferred size (chunky or minced)
Place all in a very large pot. Bring to a boil stirring continuously. Then turn down to low heat and simmer for one hour, stirring frequently to ensure that nothing sticks to the bottom.
Wash and sterile jars and boil the jar lid for 3 minutes. (To sterile jars, place the jars on a cookie sheet and bake at 200º for 15-20 minutes.)
Fill jars with salsa leaving about 1/2 inch from the top. Place lid and screw metal ring on, but not super tight.
Bring large pot of water to boil. Place jars into the water, so that the water covers the top of the jar. Boil for 20 minutes. Remove jars and set aside to cool. Continue until all the jars have been boiled. As the jars cool you will hear them pop. Now you can tighten the metal rings all the way. Enjoy! |
