1 lb. of Italian Sausage, removed from casings
5-6 small sweet potatoes, diced

This dish is fun to play with and I switch around the spices every time I make it. These are a few great spices to start with until you're ready to expirement:
--Cumin
--Ginger
--Rosemary
--Paprika
--Salt and Pepper

Remove sausage from casings and fry in a skillet until done. Transfer sausage to a bowl, keeping as much of the oils in the pan as possible.

Next cook sweet potatoes (and peppers and onions if adding) in same skillet with oils. Extra oil (I prefer olive oil) might be needed to avoid sticking. At this point you can add in any spices you are using. Cook uncovered, stirring often until soft.

Return sausage to skillet and heat all together, check spices, and serve when ready!
