5 lb pig tails
1 c ketchup
1 c brown sugar
1/2 c vinegar

Directions:
Trim the excess fat off the pig tails and skin them if desired. Cut into serving-sized pieces. Place on a rack in a shallow roasting pan. Set aside. In a bowl combine the remaining ingredients and mix well. Pour over the pig tails in the roasting pan and bake in a 350ºF oven for 1 1/2 to 2 hours. Baste occasionally. If meat is browning too quickly cover loosely with aluminum foil. Serve immediately or separate the meat and sauce and refrigerate overnight to remove excess fat. Reheat slowly in oven by placing meat and sauce together in large casserole dish.
