1 coconut milk, full fat 14 oz can, plus 1 can of water
2 - 4 tbsp Thai red curry paste
1 tbsp coconut aminos, or soy sauce (not paleo)
1 tbsp coconut sugar
1 tbsp minced ginger
2 tsp fish sauce
3 garlic cloves
1 lb chicken thighs, cut into pieces (can also use breasts)
1 medium onion, chopped
1 - 2 chili peppers, if you want extra heat
Veggies: zucchini, peppers, kale, spinach, squash (butternut or kabocha), carrots etc.

Directions:
Directions:
Place all of your ingredients except for kale or spinach (is using) into the crockpot. Stir well and place on high for 4 hours.

Ive made this outside of a crockpot and it is really good. I used zucchini, peppers, bamboo shoots etc.
