2 heads iceberg lettuce, broken into bite size pieces
3-4 chicken breasts
1 small package sliced, toasted almonds
4 tsp toasted sesame seeds
3-4 sliced green onions
rice stick noodles
oil to fry rice sticks

Dressing:
4 T sugar
3 tsp salt
4 tsp monosodium glutamate
¼ tsp pepper
¼ cup oil
4 T vinegar
few drops toasted sesame oil

Directions:
Directions:
Fry rice sticks and drain on paper towels. Do not brown.


Poach chicken breasts in water with several fresh ginger slices.
Cool and shred.

Mix together dressing.

To assemble salad:
In large bowl: add lettuce, green onions, toasted almonds, chicken, and sesame seeds.
JUST before serving, add rice sticks and dressing. Mix well.

Personal Notes:
This salad wilts very quickly. If I'm not sure all of it will be eaten, I don't mix everything together but make individual salads. Also if you don't wish to fry the rice sticks, you can buy a package of prepared chow mein noodles.
