Ingredients:  
1 lb white fish fillets
2 c milk
1 green onion chopped
1/2 tsp salt
1 bay leaf
1/2 tsp dried thyme
1 medium potato
1/4 tsp dry mustard
1 tsp lemon juice

Directions:
Directions:
Place fish in large shallow pan. Add milk, green onion, salt and herbs. Bring to a simmer. Cover pan and cook gently until fish flakes. Cook potato until soft and drain. Remove fish to warm plate. Place cooked potato in blender with 1 c of poaching liquid, mustard and lemon juice and blend until slightly thickened. Pour sauce over fish and garnish with chopped chives or parsley.
