1 1/2 c. sugar
3 lemons
4 extra large eggs
1/4 c. butter, room temp.
1/2. c. lemon juice (about 3-4 lemons)

Using a carrot peeler. remove the zest of 3 lemons, being careful not to get the white pith. Put the zest in a food processor and add the sugar. Pulse until the zest is finely mined along with the sugar.
Cream the butter and beat in the sugar and zest/ Add the eggs 1 at a time, then the lemon juice, mixing well.
Pour mixture in a 2 qt. saucepan and cook over low heat until it thickens about 10 min. about 170 degrees. Stir all the time. Remove fromheat and cool or refrigerate.
