For dusting the marshmallows:

2 1/2 tbsp cocoa powder

For the marshmallows:

1 c filtered water, divided
3 tbsp gelatin
1 c honey
1 tsp vanilla extract
1/4 tsp salt

For the cocoa paste:

7 tbsp cocoa powder
3-4 tbsp warm water

Line a 9 x 13 pan with parchment paper. Using a sifter, sift about 1 1/2 tbsp of cocoa powder over the parchment paper. In a bowl of the stand mixer, add 1/2 c water to the gelatin. There is no need to mix it. In a small saucepan (if too big will burn), add the remaining 1/2 cup of water, honey and salt. Bring to a boil, approximately 5 minutes, but do not allow it to burn. Continue to boil until the thermometer reads 240ºF. There is no need to stir the mixture but remove from the stove when it reaches 240. At this point, the gelatin will be lumpy in the mixture. Mix for 30 seconds to remove the larger lumps. Pour the honey mixture into the gelatin mixture and continue to whisk on the highest setting until it thickens kind of like a marshmallow creme and the mixture is completely cool, approximately 10 minutes. While it is mixing, stir together the cocoa powder and water to make a cocoa paste. Once the marshmallow creme is ready, add the cocoa paste to it and continue to mix for another 30 - 60 seconds or until fully incorporated. Spread out the mixture as evenly as you can right away. Do not let it sit as it makes it more difficult to spread out. Sift the remaining cocoa powder on top. Let it sit for 4 hours and then cut. Store in an airtight container at room temperature.
