2 chicken breast cut into 1/2 inch strips
2-4 cups of all-purpose flour
4-6 eggs, whisked
salt and fresh ground pepper
3-4 cups Panko breadcrumbs (Panko because they are crunchy and retain a lot less of the oil.)
Peanut oil for frying

Directions:
Directions:
Dredge chicken in the flour and coat thoroughly. Add 2 pinches of salt to the eggs and whip. (Salt makes eggs blend and break up yolks better.)

Shake off excess flour and place chicken piece into egg mixture. Coat well with egg mixture and place into Panko breadcrumbs. Coat well with bread crumbs.

Oil in a deep saute pan over medium heat. When oil is hot place chicken in by batches. Fry until golden brown, then remove to paper towels to drain.

Lightly season with salt and pepper. Serve with Cream Gravy for dipping.
(If deep frying oil to 360* for 3-4 minutes.)

Also, after coating with Panko, chicken can be frozen.
