Flour: 1 1/2 cups self rising flour
2 tsp kosher salt
3 tsp fresh ground pepper
4 tbsp. paprika

Batter: 2 eggs
1/2 cup buttermilk
1/2 cup Shiner Bock or any good Bock Beer

2 cups peanut oil
4 round tenderized steaks (1/2 lb. each)

Prepare the flour by blending the flour, salt, pepper and paprika. Set aside on a plate or wax paper.

Prepare the batter by mixing eggs with a whisk, in a large bowl. Add the buttermilk and the beer. Whisk to blend, set aside.

In a deep, heavy skillet, heat the oil to 350*. While the oil is heating, prepare the round steaks by dredging them in the flour, taking care to evenly coat meat. Shake off any excess. Dip the meat into the batter, and then again into the flour. Evenly coat the batter so that it is dry on the outside.

Test the oil (drop of batter should sizzle), and gently slide steak into the hot oil. Cook the steak about 5 minutes. Turn, taking care not to break the coating and cook 5 minutes more, or until batter is nicely browned. Hold in oven at 225* until the rest of the dinner is ready.
