Blue Cheese Dip:
1 cup of mayonnaise
1/2 cup of sour cream
4 ounces crumbled blue cheese
3 to 4 dashes of Worchestershire sauce
Salt and pepper to taste
1/2 cup of buttermilk (plus more if needed for thinning)

Chicken Bites:
1 cup of all-purpose flour
1 tablespoon of cornstarch
1 teaspoon of salt
One 12 ounce bottle of beer
2 pounds of boneless, skinless chicken breasts

Sauce:
1 cup (2 sticks) of butter
One 12 ounce bottle cayenne pepper sauce (such as Franks or Louisiana)
3 to 4 dashes of hot sauce
3 to 4 dashes of Worchestershire sauce

Directions:
Directions:
1. Heat 3 or 4 inches of oil in a heavy pot over medium-high heat to 350ºF. (I use a thermometer to make sure the heat stays consistent) Preheat the oven to 325ºF.
2. Next, make the blue cheese dip: Combine the mayonnaise, sour cream, blue cheese, Worchestershire, salt, pepper, and buttermilk in a bowl....
3. Then stir it all together until well combined. Add in a little more buttermilk to get it to the consistency you want, then cover the bowl and pop it in the fridge until you need it.
4. Now, on to the bites! Combine the flour, cornstarch, and salt in a medium bowl.....
5. Then pour in the beer whisking as you go.
6. Keep adding until the batter is somewhat thin, but thick enough to coat the chicken.
7. Cut up the chicken into 1 inch pieces.
8. Add a few pieces of chicken to the batter and toss them around....
9. Then lift them out of the batter and carefully lower them into the hot oil.
10. Fry the chicken in batches until it's deep golden brown and cooked through, 3 to 4 minutes. Remove it to a paper towel lined pan to drain.
11. To make sauce, combine butter, cayenne pepper sauce, hot sauce, and Worchestershire in a medium saucepan over medium heat.
12. Melt it all together, whisking to combine.
13. Transfer the chicken to a large bowl and pour on the sauce, tossing the chicken to coat it well.
14. Remove the paper towel from the pan, pour on the chicken and sauce, and bake for 5 to 10 minutes to seal in the sauce.
15. Serve 'em with toothpicks on a platter next to the blue cheese dip.
