3 eggs
1 C oil
2 C sugar
2 C grated zucchini
3 C flour
1 C chopped nuts (optional)
1 tsp salt
2 tsp vanilla
2 tsp baking soda
1 C raisins (optional)
1/2 tsp nutmeg (optional)
1/2 tsp cinnamon (optional)

Directions:
Directions:
Preheat oven to 350º.
MIx oil and sugar, add eggs and zucchini. If using frozen shredded zucchini, make sure to defrost, drain and squeeze out excess moisture.
Add balance of ingredients.
Pour in 2 greased floured loaf pans.
bake 1-1/14 hours.

This recipe came to me from David's stepmother, Louise Haggstrom. It is great! Worth freezing that excess zucchini we are swamped with at the peak of summer.
