4 qt. peeled and chopped tomatoes
2 c. chopped onion
1 c. seeded, chopped green pepper
1/4 c. chopped jalapeņo peppers
4 garlic cloves, minced
2 tbsp. canning salt
1/4 c. brown sugar
1 1/2 c. cider vinegar
2 tbsp. fresh parsley, minced

Place chopped tomatoes into colander and drain for one hour. Place in a large bowl and add onion, green pepper, jalapeņo pepper, garlic, and salt. In a large saucepan, bring the brown sugar and vinegar to boil over medium high heat. Add prepared vegetables. Bring back to simmer. Cook for 20 minutes uncovered, stirring often until thickens. Ladle into sterilized hot canning jars to within 1/2 inch to top. Wipe jars lids clean. Adjust new canning lids following the manufacturers directions. Process in boiling water bath for 10 minutes. Carefully remove jars from canner. Cool on dry towels. Test for seal by pressing the center of each jar when completely cool. If the lid pops up and down the jar did not seal and must be kept chilled. Label each jar. Store in a cool dry dark place and use within 1 year.
