Ingredients:  
Any cut of roast, but round roast or sirloin tip have more flavor
Small amount of oil
4 or 5 potatoes peeled and cut in quarters, or unpeeled and quartered small red potatoes
1 onion, quartered
1/2 pound of carrots, sliced (more if feeding more than 4)

Gravy:
1 1/2 c. water
1/3 c. flour
Salt & Pepper

Brown roast on medium heat on all sides in heavy dutch oven Add about 1/2 c. water, cover and place in 275º oven for 2 - 3 hours depending on size of roast. Vegetables can be added during last hour of roasting.

Gravy: Place dutch oven on top of stove. Remove roast & vegetables. Heat drippings add salt and pepper to taste, Blend water and flour, mix with drippings. (I blend the water and flour in a bowl or jar with lid and shake till smooth). Heat till boiling stirring often. More water maybe added if gravy is too thick. A little Kitchen Bouquet added to the gravy gives it a darker and richer color.

Mom sent me a recipe for roast when Johnny and I first married. I have to laugh now about how much detail she included in the original recipe, because she knew how little I knew about cooking.
