1 egg
1/3 cup olive oil
2/3 cup milk
Scant 1 1/2 cup tapioca flour
1/2 cup grated cheese (your choice)
1 tsp salt

Directions:
Directions:
Preheat oven to 400ºF. Grease mini-muffin tin. Put all ingredients into a blender and pulse until smooth - scraping sides as needed. Can put batter into the frig if desired for up to 1 week.

Fill muffin tins 3/4 full and bake for 15-20 minutes until puffy and lightly browned. Let cool a few minutes then remove. Eat while warm or reheat later.
