2 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 cup (2 sticks) unsalted butter (room temp)
3/4 cup powdered sugar
1 large egg yolk
2 large egg whites
1/2 tsp peppermint extract
1/2 cup finely crushed candy-canes
(additional powdered sugar for rolling)

1. sift together dry ingredients - flour, backing powder and salt
2. in a large bowl, beat butter and powdered sugar with electric mixer until light and fluffy. Add egg yolk and beat until blended. Add egg whites and extract and mix well (will look grainy).
3. gradually beat dry ingredients into butter mixture. Stir in crushed candy-canes.
4. gather dough into a ball. Wrap dough in plastic and chill for about an hour.
5. preheat oven to 350ºF. Line baking sheets with parchment paper.
6. form dough into 1-inch balls. Roll in powdered sugar and place on prepared baking sheets. Space about 2 inches apart. Using fork, flatten each cookie, creating crisscross pattern.
7. bake until cookies are golden on the bottom (10 to 12 minutes). Transfer to cooling racks.
