1 1/2 cups sugar
3 Tbs all purpose flour
3 large eggs
1 cup buttermilk
1/2 cup melted butter
1 Tbsp loosely packed fresh lemon zest
3 Tbsp fresh lemon juice
1 tsp vanilla extract
Unbaked pie crust

Directions:
Directions:
Preheat oven to 350º. Whisk together first 2 ingredients in a large bowl. Whisk eggs and next 5 ingredients into flour mixture. Pour into unbaked pie crust. Shield edge of crust and bake 45 min to 1 hr at 350º. It should still "jiggle." You may sprinkle a teaspoon of fresh lemon zest on top of filling last 5 minutes of cooking. Let cool 1 hour on wire rack and garnish with fresh berries, mint or whipped cream/Cool Whip
