Sugar Cookies

375 F oven for 8-12 minutes

Cream together: ¾ cup butter 175 mL
1 ¼ cup sugar 300 mL

Add 2 eggs
2 tsp vanilla 10 mL
Beat until light and fluffy.

Combine 3 cups flour 750 mL
1 tsp cream of tarter 5 mL
½ tsp salt 2 mL

Stir dry ingredients into creamed mixture. You may have to add a bit more flour depending on the size of the eggs. The dough should be soft but not sticky. Chill dough for about 30 minutes.

On lightly floured board, roll out dough to 1/8 (3mm) thickness. Cut into desired shapes. Place on cookie sheet (greased if not a coated pan) and bake at 375 F for 8 to 12 minutes depending on size, or until edges begin to brown slightly. Makes 6-8 dozen 2-inch (5cm) rounds.
