1 Lb. ground beef
1 med. Onion chopped
1 can refried beans
8 oz. grated cheddar cheese
¼ tsp. pepper
½ tsp salt
12 flour tortillas
10 oz. can red enchilada sauce, mild

Directions:
Directions:
Brown beef & onion & drain fat. Stir in beans, salt & pepper. Dip tortilla into hot oil, lay flat, sprinkle with cheese and ¼ cup meat mixture; roll tightly. Place enchilada seam down into baking pan. Pour cheese mixture over and bake uncovered at 350 for 25-30 minutes till bubbly.
Cheese sauce: Melt ¼ cup butter, blend in ¼ cup flour and cook over low heat. Stir in 1 cup grated cheddar, stir until cheese melts.
