4 Tbsp. oil
1 large onion, diced
2 large carrots, diced
2 stalks celery, sliced
6 potatoes, diced
5 Tbsp. flour
12 cups water
1 Tbsp. slat
1/2 tsp pepper
1/2 tsp thyme
2 Tbsp. oil
1 large leek
2 Tbsp. dill ( optional)

Directions:
Directions:
1. Heat the oil in a pot and saute onion, carrots, and celery for about 15 minutes.
2.Add potatoes and stir for about 1/2 minute.
3. Add flour and stir to coat.
4. Quickly add water so flour doesnt stick to the pot.
Let soup come to a boil and lower flame.

5. Simmer uncovered for about 45 minutes and add salt, pepper, and thyme.

6. In a pan, heat the 2 Tbsp. oil and saute leek for about 13 minutes.

At the end add leek and dill to the soup and heat through.
