1 pound of fresh mushrooms OR
3 ounces dried mushrooms (soaked overnight in 1 qart of water - use the liquid in the soup)
1 tablespoon butter
1 tablespoon flour
Soaking liquid from dried mushrooms or cooking liquid from fresh mushrooms and add additional liquid (water, chicken stock, vegetable stock, whatever you prefer) enough to equal 1 quart
Optional: Sauerkraut juice to taste, 1/2 cup of sauerkraut, or vinegar to taste.

If using the dried mushrooms, add enough water to cover and soak over night. If using fresh mushrooms, clean and cut the fresh mushrooms; cooked in about 1 quart of water.

Make a "zapraska" (roux) with 1 tablespoon butter and 1 tablespoon flour; saute until a golden brown. Be sure not to burn; this will brown quickly so stir constantly.

Slowly, while stirring, add the 1 quart of liquid (cooking liquid or soaking liquid) to the zapraska (roux).

Add the mushrooms in the soup along with the:
Sauerkraut juice to taste, 1/2 cup of sauerkraut, or vinegar to taste.
