1 egg beaten
1/2 tsp salt
1 cup flour
2 tbsp. water

Directions:
Directions:
In medium bowl, or right on your counter, mix flour and salt. Make a well in the middle and add egg. Mix with hands to form dough. Add water if needed. 1/2 tbsp at a time.

Knead on lightly floured surface for about 4 minutes. Roll out and cut by hand or use a pasta machine. Hang to dry a bit before boiling.

I remember making pasta with Grammy in her kitchen at 721 E. Fifth St in Bethlehem. Aunt Boops attached retractable cords near the ceiling so we could hang pasta to dry. It was like a rainforest of spaghetti in there when we made large batches. I actually have Gram's pasta machine and baking board buried somewhere in the barn back at the farm. Hopefully the girls will find it someday and use it. So much fun! Aunt Boops also added memories from our shore vacations when gram made this and hung it from every door, shower curtain rod and lamp shade we could find!
