Ingredients: 1 package yellow cake mix 1 package vanilla instant pudding (4 oz) 1 1/3 cups water 4 eggs 1/4 cup oil 2 cups Baker's Angel Flake coconut 1 cup chopped walnuts or pecans
Coconut Cream frosting: 4 tbsp margarine/butter 1 3/4 cups Baker's Angel Flake coconut 1 package cream cheese (8oz) 2 tsp milk 3 1/2 cups sifted confectioner's sugar 1/2 tsp vanilla

Directions:Blend cake mix, pudding mix, water, eggs, and oil in large mixing bowl. Beat at medium speed for 4 minutes. Stir in coconut and walnuts. Pour into 3 greased and floured 9 inch layer pans. Bake at 350º F for 35 minutes. Cool in pans for 10 minutes and then remove from pan. Cool completely on rack. Fill and frost with coconut cream frosting.
Frosting: Melt 2 tbsp butter/margarine in pan. Add coconut and stir constantly (low heat) until brown. Spread coconut on absorbent paper towel to cool. Cream together 2 tbsp margarine and cream cheese. Add milk and sugar. Mix well. Add vanilla and stir in 1 3/4 cups of coconut. Sprinkle remaining 1/4 cup coconut over top of frosted cake. |
