1 c. shortening
1 c. sugar
2 T. butter
2 eggs
2 tsp. baking powder
3/4 tsp. baking soda
4 c. flour
1 tsp. vanilla
1/2 tsp. almond flavouring
4 T. milk

Directions:
Directions:
1. Cream together shortening, sugar, butter and eggs.
2. Beat well.
3. Stir dry ingredients together.
4. Add to creamed mixture, alternately with flavourings and milk.
5. Roll out and cut into large rounds or roll into a ball and pat flat on a greased cookie sheet.
6. Bake at 350º F for 10 to 12 minutes or until lightly browned on top.

Recipe card noted that this recipe comes from Mining Camp Restaurant at the foot of Superstition Mountain near Apache Junction, Arizona. This restaurant apparently still exists.

In mining camps, the cook served these on a large platter (piled high) to the miners, with prints of cook’s hand (flattening) on the cookies.
