2/3 c. soft shortening
1 c. smooth peanut butter
2 eggs
1/3 c. sugar
1 c. brown sugar, packed
1 tsp. vanilla
1/2 tsp. almond extract
1 c. sifted all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 c. quick cooking rolled oats
icing sugar

Directions:

1. Grease a jelly roll pan (15 x 10 x 1).
2. Beat shortening, peanut butter, eggs, sugar, brown sugar, vanilla, and almond extract together until fluffy.
3. Sift flour, baking powder, baking soda, and salt together into mixture.
4. Add rolled oats and blend well.
5. Turn into prepared pan, spread and then press down with hand, making as even as possible.
6. Bake at 350º F for 15 to 18 minutes or until lightly browned and set.
7. Sift icing sugar over top and cut into squares while hot.
8. Cool in pan.
