Coconut Cream Pie Recipe

1/3 c. flour
2/3 c. sugar
1/4 tsp. salt
2 c. milk, scalded
3 egg yolks
2 T. butter
1/2 tsp. vanilla
1 c. coconut

Meringue:
3 egg whites
6 T. sugar, slowly added for stiffness

Directions:
Directions:
1. In double boiler, mix flour, sugar, salt, and milk.
2. Cook until thick, stirring constantly.
3. Add a bit of mix to the eggs yolks to warm them.
4. Then add warmed egg mixture and cook for 2 minutes.
5. Let cool.
6. Add butter, vanilla, and coconut.
7. Pour into baked pie shell.
8. Add meringue and sprinkle with coconut.
9. Bake at 350º F for 12-15 minutes.

Meringue:
Make meringue by beating egg whites and slowly adding sugar while beating until desired thickness reached.
