2 ounces white wine vinegar
1 tbsp chopped shallots
salt
2 ounces white wine
3 egg yolks
1 cup of melted butter
tarragon

Directions:
Directions:
Cook vinegar and shallots until nearly evaporated. Add wine and egg yolks, and beat until creamy. Slowly add butter, beating continuously. Add pinch of salt. Add tarragon and serve. If sauce breaks add a splash of cold water and beat.
