1 medium butternut squash, cubed
1 red onion, chopped into 1/2 inch pieces
1 bunch kale, chopped
2 tablespoons olive oil
Salt and pepper, to taste
3/4 cup dried cranberries

Directions:
Directions:
Toss cubed squash, red onion, and kale in olive oil with salt and pepper. Arrange in a single layer on a large baking sheet. Roast 25-30 minutes in 450 degree oven. Toss with cranberries and serve.
