1-2 teaspoons lemon juice
2/3 - 3/4 cups granulated sugar
1/4 teaspoon nutmeg
1/8 teaspoon salt
1/2 teaspoon grated lemon rind
1/2 teaspoon cinnamon
1 tablespoon butter or margarine

Prepare pastry to line a 9 inch pie plate. Chill. Preheat oven to 425 degrees. Wash, peel, core, quarter, and slice apples. Combine lemon juice, sugar (amount of lemon juice and sugar can be adjusted based on sweetness of apples), lemon rind, nutmeg, salt, and cinnamon.

Place half of apples in pastry lined pie plate, with sharp edges of apples turned inward so they do not cut pastry. Sprinkle with half of sugar mixture. Place remaining half of apples and sugar mixture on top, heaping apples somewhat in the center of pie since they will cook down. Trim bottom pastry even with plate rim, dot butter over apples and moisten rim of bottom pastry with cold water. Roll out the remaining chilled pastry, fit and seal as top crust of apples.

Bake for 40 minutes, or until apples are tender when pierced with a toothpick. Cool on wire rack.

Note: For blueberry pie, make apple pie using 4 cups of blueberries, 2 tablespoons of flour and same amount of spice, salt, lemon juice, lemon rind, and butter. Adjust sugar to fruit.
