Ingredients:  
1/2 c sugar
1/2 c butter
1/2 tsp. peppermint extract
1 egg
1 1/2 c flour
1/4 tsp baking soda
1/4 tsp salt

Filling
2 c powdered sugar
3 tbsp. softened butter or oleo
2 to 3 drops red food coloring (optional)
2-3 drops milk
1/2 c crushed peppermint candy ( about 18 candies)

Directions:
Directions:
Oven 350, grease mini muffin tins.
Beat sugr and butter til fluffy, add extract and egg& blend. Onlow beat flour, baking soda and salt.
Shape dough into balls, press into tins. Bake for 9-12 min. Cool 1 min. remove to cooling racks cool about 15 min and fill with icing.
Icing: Mix ingredients except candies til creamy. Add 1/4 candies into icing and fill tarts. Sprinkle candies over top.
PRICK INSIDE OF TARTS BEFORE BAKING.
