Baked Hominy Pie Recipe

2 large flour tortillas
2 - 3 slices pepper bacon
1/2 cup onion, sliced thin
1 can golden hominy, drained
3 eggs
1/3 cup cream or milk
1 cup pepper jack cheese, shredded
1/4 tsp salt
1/4 tsp pepper
2 roma tomatoes, sliced thin

Directions:
Directions:
Heat oven to 350'.
Spray a 9-inch pie plate with cooking spray.
Heat the tortilas for 20 - 30 seconds in the microwave.
Place on tortilla in the pie plate, fitting it in like a pie crust.
Brush with olive oil, then sprinkle with half of the cheese.
Fit the second tortilla over the cheese.
Cut the bacon into 1/2-inch pieces.
Cook in a skillet until not quite crisp.
Remove and drain on paper towels.
Cook the onion in the bacon grease until soft but not browned.
Drain well.
Stir together the hominy, eggs, cream, the remaining cheese, onions, salt and pepper.
Pour into the tortilla shell.
Layer the tomatoes over the pie in a single layer.
Top evenly with the bacon.
Bake for 25 - 35 minutes, until the eggs are set.
Cover with foil or a pie guard at 15 minutes, if necessary.
Cool for 15 minutes before slicing.
