1 cup creamy unsalted almond butter (or peanut butter)
1/2 cup honey
1 1/2 tsp. vanilla extract
1 3/4 quick old-fashioned oats
2/3 cup mini chocolate chips
1 tsp. ground cinnamon
1/2 tsp. salt
1 1/3 cup sliced almonds
2.5 - 5 oz. pumpkin seeds or toasted sunflower seeds (optional)

If possible, pulse oats in a food processor or blender to break them up.

Combine oats, chocolate chips, salt, cinnamon, sliced almonds, pumpkin seeds and anything else you might think as yummy into a bowl (dry ingredients only).

In a separate bowl, mix the almond or peanut butter, honey and vanilla. If it helps, it can be put into the microwave for 10 seconds before mixing. Make sure mixture is cool before mixing in the dry ingredients.

Pour the wet ingredients into the dry ingredients and mix. If it is too wet, add more oats.

Place parchment paper into an 8" by 8" baking pan. Pat the mixture down evenly. Refrigerate 1 hour.
