1 large can whole peeled green chilies, cut in half crosswise
1/2" thick stick of Monterey Jack Cheese for each piece
5 eggs, separated
3 tbsp. flour
salt, pepper

Directions:
Directions:
Put a stick of cheese in each chili. Beat egg whites until stiff. Beat yolks, combine with flour, salt, and pepper. Fold into whites until blended.

In hot oil, add a large spoonful of egg mixture. Place stuffed chili on top. Add about 1/3 cup of egg, just to cover. Fry to light brown on bottom, then turn. Fry until light brown on top.
