18 oz. boneless, skinless chicken breast
2 c. low-fat buttermilk
1/2 c. crushed cornflakes
1/2 c. flour
1/4 tsp. salt
1 tsp. pepper
3 tbsp. canola oil

Directions:
Directions:
1. Soak the chicken in the buttermilk for 4-24 hours in the refrigerator. Discard the buttermilk. Combine the cornflakes, flour, salt and pepper in a medium bowl.

2.Dredge the chicken in the mixture until completely coated. Heat the oil in a large skillet. Fry chicken for 15-20 minutes, turning once. Drain on paper towels before serving.
