1 1/2 lb pork shoulder meat
2 tbsp. salad oil
1 c water (for meat)
1 chicken bouillon cube
3 medium size carrots scraped and sliced thinly
2 tbsp. soy sauce
4 stalks celery sliced thinly
1 can (about 1 lb) bean sprouts drained
1/2 lb spinach cleaned and stems removed
1 tbsp. cornstarch
2 tbsp. water (for gravy)
1 can (3 oz) Chinese fried noodles

Step One:
Trim all fat from meat and slice thinly. Brown quickly in hot oil in large frying pan and stir in 1 c water and chicken bouillon cube. Cover and simmer 20 min or until meat is tender.
Step Two:
Add carrots, cook 10 min longer and stir in soy sauce. Arrange celery, drained bean sprouts and spinach on top. Cover and cook 5 min or just until spinach is wilted and other vegetables are crisply tender.
Step Three:
Make a paste of cornstarch and 2 tbsp. water in a cup and stir into meat mixture. Cook stirring constantly until sauce thickens and boil 3 min.
Step Four:
Spoon into hot serving dish and sprinkle noodles over top.
