1 lb white Carolina Rice
1 large jar of cheez whiz
1 can cream of mushroom soup
1 cup light cream
2 pkgs frozen broccoli cuts
3/4 cup chopped onion
1 1/2 cup chopped celery
salt and pepper to taste

Directions:
Directions:
Saute onions and celery. Cook rice. Cook broccoli but only 1/2 done.While hot, mix the rice with the cheese, mix in soup and light cream. Add sautéed onion and celery and partially cooked broccoli. Add salt and pepper to taste.

Fold into lightly greased casserole dishes or baking pan. I often used a few pyrex casseroles so I had a dish to give to someone else. Leftovers freeze well in individual freezer bags for a single serving side dish too.

Bake at 350º for 45 minutes until bubbly and lightly browned. Cover with foil during baking if needed.
