2 lb. calf liver
1 large onion diced
1 bell pepper, thinly sliced
1/2 tsp. dried parsley
2 c. hot water
2 tbsp. Worcestershire sauce
2 tbsp. catsup
Salt and pepper to taste
1 dash Tobasco (optional)
2 tbsp. flour
3 tbsp. bacon fat

Slice liver to about 1/4 inch slices and dredge in flour. Brown quickly at medium heat in 3 tbsp. bacon fat or enough fat to cover bottom of skillet. Set browned liver aside. Add 2 tbsp. flour to drippings. Stir while it browns. Add all other ingredients to flour mixture. Push onion and peppers to side of skillet and add liver into gravy. Rearrange onion and peppers. Cover and simmer 30-45 minutes or until liver is tender.

One meal I prepared that the grandchildren won't forget is when Michael asked for Liver and Onions for his birthday meal. Needless to say it wasn't pleasant for all the grands who were told to take just one bite!
