1/2 lb lean ground beef
1 envelope taco seasoning mix
2 1/4 C water
1 1/2 C uncooked pasta, such as elbows, shells, or wagon wheels
1 1/2 C frozen or canned corn
1 can (15 oz) pinto or kidney beans, drained and rinsed
1 medium tomato, chopped
1/2 C sour cream
1 C shredded Cheddar cheese
1 Tbsp chpped fresh chives

Directions:
Directions:
Cook beef in large skillet over medium high heat about 6 minutes, stirring frequently, until brown.
Drain.
Stir seasoning mix, water, pasta, corn, beans and tomato into beef.
Heat to boiling.
Stir and reduce heat to medium low.
Cover and cook 10-15 minutes, stirring occasionally, until pasta is to desired doneness and most of liquid is absorbed.
Stir in sour cream.
Remove from heat.
Sprinkle with cheese and chives.
Cover and let stand 2-3 minutes or until cheese is melted.
