2 cups buttermilk
2 large Vidalia onions, sliced very thin and separated into rings
2 cups flour
2 Tbsp cornmeal
1 Tbsp salt
1 Tbsp pepper
2 tsp cayenne pepper
1/2 tsp paprika
1 quart oil

Directions:
Directions:
Soak the onions in buttermilk in a covered bowl in the refrigerator for 1 hour.
Heat the oil in a deep fryer or large saucepan to 400'.
Whisk the remaining ingredients together.
Working in batches, remove the onions from the buttermilk and let excess liquid drip off.
Place in the flour mixture and toss to coat.
Shake off any excess flour.
Cook in the oil until golden brown, for 3 - 4 mintues.
Transfer to a paper towel-lined plate to drain.
