4 (1 oz.) squares unsweetened chocolate
4 cups flour
2 tsp baking soda
1/2 tsp salt
1 1/4 cups vegetable shortening (Crisco)
2 cups white sugar
2 large eggs
1/3 cup light corn syrup
2 1/2 tbsp water
2 tsp peppermint extract
1 tsp vanilla extract

Melt chocolate squares in the microwave and let cool. Preheat oven to 350º F. In a small bowl, whisk together flour, baking soda, and salt; set aside. In a large mixing bowl, cream the shortening and sugar until light and fluffy. Add eggs and blend well. Add chocolate, corn syrup, water, and extracts. Blend well. Stir in flour mixture until just blended. Shape the dough into 1 inch balls; roll in sugar. Place balls about 2 inches apart on a greased cookie sheet. Bake for 9-11 minutes. Cool for a few minutes on cookie sheet and then transfer to wire racks or wax paper and cool completely.
