4 cups chopped onions
12 cups sliced green tomatoes


4 cups granulated sugar
2 cups cider vinegar
2 tbsp. pickling spice
2 diced red peppers (for a contrast in colour)

Directions:
If 12 cups of water isn't enough, add enough water to cover the vegetables in a glass or stainless steel container. Any other type of cookware material will corrode because of the acids - and will affect the flavour of the pickles. Let stand 24 hours then rinse off and place in a large, stainless steel or glass cooking pot.

Add 4 cups of white sugar and 2 cups of cider vinegar. Pour over the tomatoes and onions. Add 2 tbsp. pickling spice. (I put the spice in a cheesecloth bag and remove it after finished cooking.)

Bring to a boil and simmer for 15 minutes or until the vegetables are tender but not mushy. You may also add, if desired, 2 diced red peppers for a contrast in colour.

Pack into sterile jars and process for 10 minutes in a boiling water bath.
