6 to 8 yellow squash
1 green bell pepper
1 can Ro-Tel tomatoes, drained
8 oz. cheddar cheese grated
1 can mushroom soup
1 sleeve saltine crackers
1 stick butter or margarine
salt and pepper

Directions:

Grease a 9x13 inch oblong glass dish. Thinly slice squash. Cover bottom of dish with a layer of squash. Salt and pepper squash layer. Dice and sprinkle some green pepper on top of squash. Spread some of the Ro-Tel tomatoes on top of this layer. Repeat steps for 3 layers. Put all the cheese on top. Pour soup on top of cheese. Crush crackers and pour on top of soup. Melt butter and drizzle on top of crackers. Bake at 350º for 1 hour and 15 minutes or until crackers are golden.

I love this recipe for squash. I usually only make it when we have fresh squash from the garden. Squash from the grocery store just doesn't have the same flavor.
